Sumario:Innovation ecosystems are driving foodtechs and the development of plant-based foods, relying on a circular economy model. However, there is a need for greater integration between the public and private sectors. The research, of observational and qualitative nature, analyzed databases and specialized websites within the historical context and social phenomenon. It contextualizes the challenges from post-war times to the current need for sustainability in the food system. The circular economy model involves collaboration between universities, industry, and government, following global nutrition and sustainability guidelines. Countries like Israel, Singapore, and the USA exemplify this interaction, where academia contributes to research and innovation, while industries and governments facilitate production and regulation. Foodtechs and digital platforms are essential in optimizing supply chains and reducing waste, driving the growth of the plant-based market with investments and an increasing awareness of health and sustainability. Strengthening collaborative strategies is recommended to foster innovation in plant-based foodtechs.
